Pretty good

I really love this book, and CD.

In all fairness, I've just been flipping through the book for the last few hours so I'll come back later and give a more thorough review.

If you are a beginner to French or otherwise cooking techniques, I would first recommend signing up for the inexpensive online Rouxbe cooking school in Vancouver BC. $15 a month is pretty cheap to get you up to speed with fantastic clear narrated videos of all the most important cooking techniques.

Then come back and buy this book as you'll appreciate it 10 times more!

The Book:

The layout is pretty good I do have to do some flipping around to figure some things out but I do find what I'm looking for when needing to cross reference. So A+ for cross referencing.

The pictures are beautiful, and five stars for including practice recipes with the page numbers! Love the tips and foot notes.

Unfortunately for a beginner, and not so beginner some of the subjects covered don't go that deep into explanations, theory, and how and when things go wrong and how to fix it when it does. Very important for any culinary technique text.

Like there are three types of a Roux, white blond and brown,--not just the two mentioned in the book and no mention as to where or why I would use any of them.

I was surprised to see the stock recipe calls for you to boil it, then simmer. Also says nothing about how to roast the bones. Like I said, you kinda have to know what you are doing if you are going to use this text. Boiling causes fat to emulsify. If you boil your stock, you end up with a greasy stock and the only way to get that grease out of your stock is to use egg whites, shells and a tube. But, hey I'm just a housewife, not a chef. But I'll still never again boil any stock, even for a second, roasted or not.

Also, on making a brown stock, he's actually giving you a ratio for your mirepoix, which is quite beneficial but he doesn't tell you that. Also if you can't find crushed bones and don't want to waste all that energy on just a pound of bones, you're going to have to simmer a lot longer than his chart suggests.

Also it just says to remove the fat--not how, skimming it doesn't get all of it, it needs to cool down anyway so put it in the frig. By morning you can easily remove the chunks of solid fat off the top with a spoon, then a paper towel for the smaller ones.

Also he doesn't mention how to quickly cool it down and why. He assumes you already know this info. If you don't, good luck.

All said and done. I LOVE this book! It totally rocks because I'm finally at a level where I can appreciate and understand it! It has almost everything I wanted in a text! I am at a point now that I'm getting "hungry" for more sophisticated French techniques but not ready for the more complicated texts I have collecting dust on my shelves. This book delivers.

There are too many positive things to mention like charts/conversions/meat varieties, potato varieties/liaisons/etc. and lots of practice recipes. Thank you! I'm gonna have fun with this book!!

The CD:

Breath taking videos! Now that's what I'm talk'n about!! And lots of 'em!!

You can really SEE what they are doing, although you might not understand because there is no narrator, and unfortunately no subtitles. Say what?

Unbelievable. What were you guys thinking? At least give us subtitles, something, anything.

How about including at the very least a page number for the techniques you are showing us as you cannot watch these videos without having the text to reference right in front of you.

And the music you picked? I like it, rather upbeat and goofy but I keep waiting for Marcel Marceau to pop into the picture and say, "just kidding, here's the real soundtrack with chefs who talk to you while they are showing you the techniques."

So I give the CD Five stars for the quality of picture, five stars for entertainment, and five stars for the humorous blunder, but minus five stars for no instructor explaining what he is doing and why.

Hence only, 4 star over all rating.

I bought this book mostly for the CD! At least it makes me laugh. What were you trying to tell me while pointing at those bubbles on top the bechamel? Or were you pointing at something else. Where's Marcel when you need him?

Excellent resource!

As a teacher of professional French cooking in Paris, France, I can say that this book is a wonderful resource for anyone wanting to learn academically-taught French cooking. It was written by two teachers in the French national culinary program whose authority on the subject is evident in the techniques and recipes. Furthermore, there is all kinds of extra information for the curious at heart: I'm always looking for ways to illustrate to my students the historical facts that might accompany their recipes, and this book provides many anecdotes around a dish's origin. The recipes range from the French curriculum basics to more involved recipes from France's most famous chefs. If you've cooked your way through the basics, you'll be prepared to create the more complex recipes, as French technique is all about building blocks. Of course, no book can replace a live teacher, but this is the closest you can get. Also, the translation from French is of excellent quality!

Entertaining for an afternoon read

Received a copy in exchange for an honest review (but had forgotten I pre-ordered it so I have 2 copies)

If you're looking for a short read to pass the afternoon and have a thing for werewolves this will work for you, if you need a lot of world building and character development you might want to look elsewhere until you're in the mood for a quickie.
This story drops you into the relationship between Galen and Melissa after it has already happened, and she's very far along into her pregnancy... so make sure you read the synopsis so you know what is going on because the flashbacks of their history are very brief. I prefer a lot more world building especially in a situation with shifters who seem to have an unusual pack structure, but overall for a quick read it was enjoyable watching a full human stand up to an Alpha whose wolf rides so close to the surface.

Emotionally renched, wanted more from some of the characters

OMGosh… I can't begin to say how much of a wonderful change this book was. It had me emotional stoked from the start. I swear that I felt my heart beating as fast as Lissa's. Her emotions were raw and just reaching out to the reader. Galen is full of rage at Lissa and anger at the situation. The story moves through its trials and Lissa & Galen's interactions at Galen's home with his family and pack.

This is where I had a hard time with the story. These fiercely loyal men and their beliefs of women. And yet, they first and second treat Lissa like she is not worth listening to or cherishing. That a lowly human is less than Andrea, another wolf. It takes much before they all come around. Even then I felt like I wanted to see more punishment or dealing with Andrea.

This was a short story and as such, it suffered a bit from having the previous encounter between Melissa and Galen cut to just flashbacks. Instead you get an angry werewolf who is abrasive and harsh to his pregnant ex-lover. It was hard to like him when he was such a b*stard all the time. Add in an obvious plotline and foe, and it was a little anticlimactic. For me it needed more depth, more connection between the main characters and a less obvious trail to get from A to B.

In the final part, Kim considers the implications of Korea's experience as a potential role model for other catching-up countries. Interesting perspective

This book is not so easy to read but it does provide a valuable look at what is going on in Korea and much of Asia. The West is mostly blind to the major changes that are taking place in this part of the world. At some point we are going to have to wake up and become more competitive. This book is a good contribution toward an understanding of these issues. It helps frame the debate and changes we need to make in the West.

I was pleasantly surprised when I received the Permanent Makeup Manual. It was a thick book with colorful illustrations on almost every page. A professional makeup artist recommended this manual because she refers to it as a guide. The chapter on Color is very thorough on what colors to use for undertones for different procedures. I also will use this manual as my guide throughout my career as a permanent makeup artist. I would recommend this book to anyone in the industry or considering being a permanent makeup artist.

You NEED to go through these books if you are looking to be competitive in the National Geographic Bee. The actual bee questions are very similar - this will give newbies an idea of how and what to study. My son has been to our state bee twice- first as a 4th grader and last year as a fifth grader. He made it to the finals as a fourth grader and he used these and Geography Demystified book to study. He was very comfortable with the questions even though he had never been there. - Now I am not saying they are the same questions- because they are not, but they are at the same level and give you an idea of what kind of knowledge they are looking for! This book was extremely helpful for preparing and going through my academic job search (which was successful). The examples were usually helpful, but even more helpful was the context and ideas they presented about what you should do at each stage.

Indispensable resource if you are planning to pursue a career in academia

Excellent resource if you are planning to pursue a career in academia. It was like having my mentor there by my side while I prepared the application materials. The C.V., cover letter, teaching and research statement examples within this text are invaluable, and helped me take my application packet to the next level. The chapter on interviewing is spot on, and took the guesswork out of the interview process. I developed and refined my responses to all of the questions outlined in this text, which made me much more comfortable when it came to being interviewed by the search committee (no question was a surprise). Hopefully I will get to use the negotiation chapter in the near future.

Excellent resource

What can I say? This book is excellent. The authors obviously have a lot of experience in this and know what they're saying. A friend of mine, who also succeeded in her job search, wrote me "I can't believe that we talked about you applying for academic jobs and I didn't tell you to immediately order a copy of this book:[...] Order a copy NOW. Do not delay. Trust me on this one. (And then read it as soon as it arrives.)"

Perhaps this all sounds hyperbolic; the book isn't perfect, but since nothing is ever "perfect", I can honestly say this is one of the closer things to perfect I've read. It could use more examples from more specialty/sub-fields--or at least, an on-line resource with that, it seems like they have a good eye/experience in successful applications and having examples covering more of the vast variety in today's academic jobs would be super-useful.

It could also do, perhaps, with some "big points" summaries, or checklists (with page numbers, so that it doesn't have to be a stand-alone dumbed-down version), to help you when you're frenetically searching back for a bit of advice or half-remembered guideline while deadlines approach.

Bottom line: get it, read it!

Enjoyable read but...

$3.99 and we don't get close to 100% on a Kindle device, like 80%? That's just wrong and deceiving however, for me it didn't matter because I liked Marcus and Rebecca's story but had I known beforehand or read it in a review I would not have purchased it. Book 1 free who can argue with that but books 2&3 @ $3.99 each and both do not come close to 100%. While I did enjoy this series, sadly I will not purchase any more books from this author since this price appears standard as well as the lengths.

3 books needed to complete the story

So I was entertained by the first book, but this one really has not kept my attention at all and, I give, I'm not going to buy the third book to even find out what happens. The marketing approach of taking one book/story and dividing it into three books only annoys me. It might be ok if each book could stand on its own but that isn't the case here.

truth exposed

Now Marcus has crossed the line with a very public proposal and Rebecca is more than a little angry with him. She does her obligation and acts the part but at first opportunity she leave in his private jet and head back to LA. She gets back and get rid of everything she has that is part of this fake girlfriend and tries to get on with her life. Unfortunately, the paparazzi had other ideas and have turned the proposal into front page news. Turning her life upside down because now her family is involved and the “fake” relationship that is becoming all too real still can’t end.

Thanks to toxic mold being found in Becca apartment building, she has to move into Marcus’s mansion for a while. During her time there, they both finally give up the act and admit they don’t want this to end and they want a real relationship together. Hence the creation of the cliffhanger that takes you to book 3….Becca’s pregnant.

I appreciated the turns and the exposure that the charters had to display to get to this point in their relationship. It’s sweet and it’s real for a situation that was downright fantasy to start.
